Molokheya (or corete) is found in North African and Levantine cuisine and also as far away as Asia and Japan.

The vegetable spinach from which the spice comes is a variety of wild spinach; the spice therefore has a taste oscillating between sorrel and spinach. Can be used anywhere to bring its unique flavor, and also has thickening properties.
