attiéké balls are a culinary specialty of southern Ivory Coast. They are made from semolina produced from cassava . The cassava is peeled, ground, and mixed with a small amount of previously fermented cassava. The mixture is then left to ferment for one to two days. Finally, the dough is drained, sifted, dried, and winnowed.
