• INGREDIENTS: for 8 to 12 portions
– 1 veal trotter (approximately 1.250 kg)
– 1.25 l of cold water
– 5 cloves of garlic, including 3 for the broth
– 1 onion
– 3 bay leaves
– 1 tbsp coarse salt
– 1 dozen pepper berries
– 3 hard-boiled eggs
