Molokheya (or jute mallow) is found in Maghreb, Levantine cuisine and also as far as Asia, in Japan.

The jute mallow, from which the spice is derived, is a variety of wild spinach; the spice therefore has a flavor somewhere between sorrel and spinach. It can be used everywhere to add its unique flavor and also has thickening properties.
