The traditional dog sauce 516G is an emblematic sauce of the French Antilles, in particular Guadeloupe and Martinique. Prepared from fresh ingredients such as onion, garlic, parsley, ciboule (cive), West Indian pepper and lemon juice, this sauce is raised by a touch of oil and sometimes white vinegar. It is traditionally used to accompany grilled meats, fish and crustaceans, bringing a spicy and tangy flavor that enhances the dishes.
The name “dog sauce” comes from the “dog” knives, commonly used to chop the ingredients necessary for its preparation. This condiment has become a must in Creole cuisine, appreciated for its freshness and its ability to enhance the simplest dishes.
