Gari is a fine grain semolina obtained from fermented cassava pulp that is crushed, sifted and then dried.
recipe for gari au gras “pinon” for 4 people.
ingredients:
1kg of pork
2 fresh tomatoes
2 tbsp tomato paste
green chilies
1 onion
salt oil
pieces of ginger
small bunch of parsley
1 tsp black pepper
3 or 4 cloves of garlic
chicken broth
500g of gari
1 tsp green anise
1/2 liter of water
Minimum preparation time:
Crush the black pepper, garlic, ginger, half an onion, and anise together. Then thoroughly wash the meat and season it with the resulting paste. Add salt, stock, bay leaves, and a bunch of parsley, and cook.
While the meat is on the fire, crush the fresh tomato and the chilies separately (don't forget to salt the chilies)
Put a saucepan on the stove and add about 2 tablespoons of oil, add the tomato paste and grill for 2 minutes (stirring constantly)
Next, add the fresh tomato and the meat broth, then simmer for 6 minutes
Pour the gari into the sauce obtained and prepare over low heat (it is prepared like a paste). You can also remove the sauce completely before making the mixture.
Serve with crushed green chili and onion (both ingredients are essential in tasting pinon), and don't forget the grilled pork!
